Pancakes might not seem like the most exciting recipe ever, but who doesn’t love a plate of fluffy pancakes on a Saturday morning? A lot of the gluten free pancake recipes I’ve come across so far just seem overly complicated – ingredient lists a mile long, and far too much work for my groggy self on a weekend morning.
This recipe came about by playing with my favourite regular pancake recipe, and reading more than a few gluten-free pancake recipes. It’s simple, quick, and as tasty as a regular wheat pancake.
1 cup white rice flour
1/3 cup potato flour
1/3 cup rolled oats
1 apple, peeled and grated
1 Tbsp baking powder
1 Tbsp sugar
1 tsp cinnamon
1 cup buttermilk
2-3 Tbsp butter, melted
Pinch of salt
Combine dry ingredients in a bowl
Whisk the egg and the milk together, and slowly add in the melted butter
Pour wet ingredients into the dry, and stir thoroughly. Add in the grated apple, and stir again.
Seriously, it doesn’t get easier than that.
Easy, fast delicious pancakes. No need to rest the batter, cook ‘em up immediately!
